I’m in a great mood today, and do you know whyyy?? Cause the weekend is almost here!! And what do I do on the weekends?? VOLUNTEER!!! Yay! lololol
Okay, lol maybe I should calm down just a little, but I had coffee today, and your girl has a caffeine sensitivity, so yeah, I’ll be bouncing off the walls for a while.
If you didn’t know, I volunteer two Saturdays each month at my local animal shelter. I stan ALL animals but when it comes to puppies, I can’t resist those little piles of furry goodness! Ouuu I just wanna squeeze ’em! I mean who doesn’t love a cute doggo?!
So to get you guys in as good of a mood as I am, I’m making super delicious Keto Coconut Pancakes for dinner tonight and breakfast tomorrow. #breakfastfordinner #binner ? lol
Be sure to have some fresh fruit on hand and your fave syrup because these babies are gonna beg you to eat more and more and more!

Anyway, here’s the quick and easy recipe for yummy, scrummy keto pancakes, and this time the ancestors didn’t have to whisper the amounts lol:
Keto Coconut Pancakes
3 Small Eggs (or 2 large ones)
2 Cups Coconut flour
1/4 Cup Baking powder
1/3 Cup Sugar of your choice
1 Stick Grassfed Butter (melted)
1 Cup Whipping Cream
1 Tsp Coconut Essence
Just a Pinch of Himalayan Pink Salt!
First, you’re gonna want to mix all your dry ingredients together. So in a large bowl, in goes your flour, baking powder, sugar, and salt. In another bowl, mix all the wet ingredients together, then add the dry to the wet, whisking briskly as you go. ( Whisking Briskly, lol, I like that. Sounds like the name of a cool country band.)
Let the mixture rest for a bit, and when you see teeny bubbles appear at the top, then it’s ready to be fried up into delicious discs of delightfulness! (Try saying that three times fast!)
Heat your pan up on medium-low heat and coat the inside with just enough coconut oil to cover the base.
Fry each pancake for 2-3 mins depending on how thickly you’ve poured them, and you’ll know when to flip them when you see what? Bubbles! lol (yeah, I really need to lay off the coffee.)
When these puppies are done (oops!), pour a generous amount of syrup over them, and top with your fave fresh fruit. You can even get fancy and dust them with powdered sugar if you like.
Btw….. my first batch didn’t turn out right, so while the second set is resting, I’m whipping up another recipe, but this one isn’t for eating!
After all that volunteering, (and whenever this coffee wears off) your girl is gonna be tired. So I’ll unwind by taking a vigorous shower with a homemade sugar scrub.
It’s super-easy to make, and all you’ll need is an air-tight container and just two ingredients!
In the container, pour 1 cup coconut oil and then slowly add 1/2 cup brown sugar, stirring as you add.
You want the consistency to be pliable but definitely not runny.
Add a few drops of coconut essence if you like, and that’s it!
You’ll now have a DELICIOUS smelling and totally soothing sugar scrub.
Store in your fridge when not using.
Now that’s done, I’m off to try making these pancakes again, so wish me luck and have a great, fun-filled weekend ahead.
